9/22/2010 Cooking Pastured Meats
Even though you know that eating pastured meats has a variety of health benefits and doesn’t create a destructive acid condition in the body, do you know that even cooking it is different. Pastured meats are leaner and can be prepared far more simply then commercially raised meats. We will also talk about curing a bit in a variety of preparations. We will cook and taste beef, pork, lamb and chicken and demonstrate roasting, dehydrating, curing, grilling and braising. You will leave with the confidence and information to do this at home as well as a variety of recipes.

This is the class for those of you that have always wondered about home-made yogurt, kefir, butter and creme fraiche. We will taste, demonstrate how to make them at home and what tools to use. This can also be a troubleshooting time for those of you that have tried and found your results were not what you’d hoped for. Discover new ways to add these delicious creamy ingredients to your life and improve your health at the same time.
8/4/2010 Lacto-fermented Pickles & Cultured Vegetables Class
We will discuss how and why to make traditional cultured vegetables and pickles and a variety of techniques to do so. This is a class for all levels of kitchen go-ers and should be a lot of fun…plenty of tasting too! And don’t worry, i will send you home with recipes and some helpful troubleshooting tips. 6pm $30/person. Bring a knife and an apron if you have one!
