February 18th — Learn to Make Feta Cheesemaking Class Plus Wine Tasting!!  with Charlotte Smith of Champoeg Creamery 1-4pm
 
Learn to make feta cheese from raw cow’s milk fresh from the farm.  The best way to learn cheesemaking is doing just this – to actually help make cheese & experience what each step looks & feels like – both the art & science of cheesemaking. We will cover everything from the coagulation process of turning milk into firm curds to rolling up your sleeves to cut and stir the curds, and finally, form the blocks of feta.  Enjoy a glass of wine as you taste and learn.
 
I also carry an assortment of fine cheesemaking supplies – you will be able to purchase the basics you need and along with your newly acquired cheesemaking knowledge will be able to go home and make your own batch of feta!
Classes are limited to 10 participants so we can have lots of hands-on participation. A class that offers guidance on how to plan meals & combine food for great digestibility
We will explore meal planning by breaking down the meal into parts, looking at seasonal foods and learning how to build a solid pantry.
There are various schools of thought on how to combine food. We will be talking about combing patterns that allow the body to break down foods easily and absorb the maximum amount of the food’s nutrients. Honoring these combing patterns can allow us to feel energized after our meals and give us freedom from gas & bloating.  Everyone will leave with a food combining chart.

This recipe is a Cheddar shortcut. It’s great to use when you want to have a Cheddar type of cheese but save time in the process.Learn to make Farmhouse Cheddar Cheese on Saturday, March 17, from 1:00-4:30 PM made from raw milk fresh from the farm.  The best way to learn to make cheese at home is doing just this – to actually help make cheese & experience what each step looks & feels like – both the art & science of cheesemaking. We will cover everything from the coagulation process of turning milk into firm curds, cutting and stirring the curds, and placing the cheese in the molds and starting the pressing process. Enjoy a glass of wine as you taste and learn.

March 20th — Pregnancy Nutrition Course Begins 6:30pm

The Pregnancy Nutrition Series is a 6 course series co-taught by Dr. Rebecca Asmar of Bambu Clinic and Tressa Yellig of Salt, Fire & Time. The topics include Pre-conception diets and detox, First Trimester Nutrition: Remedies & Recipes, Second Trimester Nutrition: Hormone Balance and Vaccinations , Third Trimester Nutrition & Birth Preparation: Making a Food Plan, Postpartum Management: Breastfeeding & Healing, and Baby’s First Foods: Introductions. We will share recipes, nutrition information, a variety of resources and other helpful hints to make your relationship to your baby healthy and as comfortable as possible. The classes will be discussion based and information packets will preceed each class to give a basis for the conversation. Classes start at 6:30 and will run until 8pm. There will be small tastings of recipes and tea served.
