December 13th — Simple Cures: Preserving Meats & Fishes: Preserving Meats is a seasonal favorite as this is the time for building that healthy and organ insulating layer to protect us from the cold. It is also a time for deep rich flavors. This class is designed to give you and understanding of the role that you can play using salt as your primary cooking tool. It is also a preservation technique and a way to lacto-ferment your meats! Students will have a chance to take home products that we make and taste extensively finished foods to create a strong foundation for using these things at home. I will demo (and you will help to make) Pork Rillettes, Gravlax, Homemade Bacon and Pickled Herring, perfect for holiday entertaining and food gifts. This is a 6-week series of classes to give you information not only to help you conceive but to see you all the way through baby’s first foods and introducing them.
